Vegetable Avial (Kerala Style)

Ingredients

  • 200g drumstick pieces
  • 200g elephant yam cubes
  • 200g raw banana slices
  • 200g carrot batons
  • 150g fresh grated coconut
  • 3 green chilies
  • 1/2 tsp cumin seeds
  • 100g thick yogurt
  • 2 tbsp coconut oil
  • 10 curry leaves

Cooking Steps

Pressure cook vegetables with salt and turmeric for 1 whistle until tender but firm.

Blender: Pulse coconut, cumin, and green chilies into a coarse paste.

Drain excess water from vegetables and add the coconut paste, cooking on low heat for 3 minutes.

Stir in whisked yogurt and cook for 1 minute.

Finish with raw coconut oil and fresh curry leaves.

The Perfect Pairing

Moong Dal Payaru Usili

Ingredients

  • 200g split yellow moong dal
  • 4 dry red chilies
  • 1/2 tsp asafoetida
  • 1/2 tsp mustard seeds
  • 100g fresh grated coconut
  • 2 tbsp gingelly oil

Cooking Steps

Soak moong dal for 1 hour. Drain well.

Blender: Pulse dal with red chilies and salt to a coarse, thick paste.

Steam the dal mixture in a heat-proof bowl inside the pressure cooker (without weight) for 10 minutes.

Crumble the steamed dal with a fork.

Heat oil in a pan, temper mustard seeds and asafoetida.

Add crumbled dal and stir-fry on medium flame until golden and crispy.
