Trinidadian Green Fig and Salted Tofu Sauté
Ingredients
- • 500 g (6 pieces) Unripe green bananas
- • 200 g (1 block) Firm tofu
- • 50 ml (3 tbsp) Coconut oil
- • 10 g (1 bunch) Chives
- • 5 g (2 tsp) Thyme
- • 2 g (0.5 tsp) Scotch bonnet mash
Cooking Steps

Pressure cook peeled bananas for 8 minutes.

Crumble tofu into small shards.

Sauté tofu with oil and aromatics.

Fold in boiled banana pieces.

Season with bonnet mash and salt.
