Tangy Chole Masala with Masaledar Soya Bhurji
Tangy Chole Masala
Ingredients
- • 400 g Canned Chickpeas (drained and rinsed)
- • 150 g Onion (finely chopped)
- • 200 g Tomatoes (pureed)
- • 15 g Ginger (grated)
- • 10 g Garlic (minced)
- • 1 Green Chili (slit)
- • 2 tbsp Vegetable Oil
- • 1 tsp Cumin Seeds
- • 1/2 tsp Turmeric Powder
- • 1 tbsp Coriander Powder
- • 1 tsp Red Chili Powder
- • 1 tbsp Chole Masala Powder
- • 1 tsp Amchur Powder (Dry Mango Powder)
- • 1/2 tsp Garam Masala
- • Salt to taste
- • 150 ml Water
- • 1 tbsp Fresh Coriander (chopped)
Cooking Steps
Heat oil in a pressure cooker. Add cumin seeds and let them splutter.
Add chopped onion and sauté until golden brown (5-7 mins).
Add ginger, garlic, and green chili. Sauté for 1 minute until fragrant.
Add tomato puree and cook until oil separates (5-7 mins).
Stir in turmeric, coriander, red chili, chole masala, amchur powder, and salt. Cook for 1 minute.
Add drained chickpeas and water. Close the lid and pressure cook for 2 whistles (or simmer on stove for 10-12 mins if chickpeas are already soft).
Once pressure releases, open the lid, mash a few chickpeas to thicken the gravy. Stir in garam masala and fresh coriander. Simmer for 2 minutes.
Masaledar Soya Bhurji
Ingredients
- • 100 g Soya Granules
- • 100 g Onion (finely chopped)
- • 50 g Tomato (finely chopped)
- • 5 g Ginger-Garlic Paste
- • 1 Green Chili (finely chopped)
- • 1 tbsp Vegetable Oil
- • 1/2 tsp Cumin Seeds
- • 1/4 tsp Turmeric Powder
- • 1 tsp Coriander Powder
- • 1/2 tsp Red Chili Powder
- • 1/2 tsp Garam Masala
- • Salt to taste
- • 1 tbsp Fresh Coriander (chopped)
Cooking Steps
Soak soya granules in hot water for 5 minutes. Drain thoroughly and squeeze out excess water.
Heat oil in a pan. Add cumin seeds and let them splutter.
Add chopped onion and sauté until translucent (3-4 mins).
Add ginger-garlic paste and green chili. Sauté for 1 minute.
Add chopped tomato and cook until it softens (2-3 mins).
Stir in turmeric, coriander, red chili powder, and salt. Cook for 1 minute.
Add the squeezed soya granules and mix well. Cook for 3-4 minutes until dry and well combined with spices. Stir in garam masala and fresh coriander.
