Tamil Nadu Vegetable Kootu

Ingredients

  • 100 g Toor dal
  • 200 g Mixed vegetables (Chayote, Carrot, Beans)
  • 50 g Fresh grated coconut
  • 1 tsp Cumin seeds
  • 0.5 tsp Turmeric powder
  • 1 tsp Mustard seeds
  • 2 Dry red chilies
  • 10 ml Coconut oil

Cooking Steps

Pressure cook the toor dal with turmeric and 300 ml water for 3 whistles.

In a blender, grind coconut, cumin seeds, and red chilies into a coarse paste.

In the pressure cooker, add chopped vegetables with 100 ml water and salt; cook for 1 whistle.

Add the cooked dal and coconut paste to the vegetables; simmer for 5 minutes.

Heat oil in a small pan, add mustard seeds, and temper over the kootu.
