Raw Mango Rice (Mavinkayi Chitranna Style)
Ingredients
- • 200 g Sona Masoori rice (cooked)
- • 100 g Grated raw mango
- • 2 tbsp Groundnut oil
- • 1 tsp Mustard seeds
- • 1 tsp Turmeric powder
- • 0.5 tsp Asafoetida (Hing)
- • 30 g Roasted peanuts
- • 10 g Curry leaves
- • 1 tsp Salt
Cooking Steps

Cook rice in pressure cooker until fluffy and let it cool.

Heat oil in a pan, add mustard seeds and curry leaves until they splutter.

Add peanuts and roast until golden brown.

Add grated raw mango, turmeric, and asafoetida. Sauté for 5 minutes until soft.

Mix the cooked rice into the pan, season with salt, and toss well.

Spiced Chickpea and Coconut Stir-fry
Ingredients
- • 200 g Boiled chickpeas
- • 50 g Fresh grated coconut
- • 1 tbsp Ghee
- • 1 tsp Cumin seeds
- • 0.5 tsp Turmeric powder
- • 1 tsp Salt
- • 10 g Fresh coriander leaves
Cooking Steps

Heat ghee in a pan and add cumin seeds.

Add the boiled chickpeas and sauté for 5 minutes.

Add turmeric and salt, mixing thoroughly.

Stir in the grated coconut and cook on low heat for another 5 minutes.

Garnish with chopped coriander before packing.
