Raw Mango Coconut Rice (Mavinakayi Chitranna Style)

Ingredients

  • 200g Basmati Rice
  • 100g Grated Raw Mango
  • 50g Fresh Grated Coconut
  • 1 tbsp Mustard seeds
  • 1 tsp Turmeric powder
  • 20g Roasted Peanuts
  • 15ml Coconut oil
  • Salt to taste

Cooking Steps

Cook rice in pressure cooker with 400ml water until fluffy.

Heat coconut oil in a pan, add mustard seeds and peanuts, sauté until golden.

Add grated mango and turmeric powder, cook until soft.

Mix in the cooked rice, grated coconut, and salt.

Toss well on low heat for 5 minutes and pack.

Spiced Paneer and Cashew Crumble

Ingredients

  • 200g Paneer, crumbled
  • 30g Cashew nuts, crushed
  • 1 tsp Cumin seeds
  • 1/2 tsp Turmeric powder
  • 10g Butter
  • 1 tbsp Fresh coriander, chopped

Cooking Steps

Heat butter in a pan, add cumin seeds until they splutter.

Add crushed cashews and sauté until light brown.

Add crumbled paneer, turmeric, and salt.

Stir-fry for 5 minutes on medium heat until slightly dry.

Garnish with coriander and cool before packing.
