Quick Sambar
Ingredients
- • 75 g Toor Dal
- • 100 g Drumstick, chopped
- • 100 g Tomato, chopped
- • 50 g Small Onions (or 1/2 large onion), chopped
- • 15 g Tamarind (lemon-sized ball)
- • 1 tbsp Oil
- • 1 tsp Mustard Seeds
- • 1 sprig Curry Leaves
- • 0.25 tsp Asafoetida (Hing)
- • 2 tbsp Sambar Powder
- • 1 tsp Salt (or to taste)
- • 400 ml Water
Cooking Steps
Wash 75 g toor dal and pressure cook with 200 ml water and a pinch of turmeric for 3-4 whistles. Mash lightly.
Soak 15 g tamarind in 50 ml hot water for 5 minutes. Extract pulp and discard residue.
Heat 1 tbsp oil in a pot over medium flame. Add 1 tsp mustard seeds. Once they splutter, add 1 sprig curry leaves and 0.25 tsp asafoetida.
Add 50 g chopped small onions and sauté for 2 minutes until translucent. Add 100 g chopped tomatoes and cook until soft (3-4 minutes).
Stir in 100 g chopped drumstick (or other quick-cooking vegetables) and 2 tbsp Sambar powder. Sauté for 1 minute.
Pour in the tamarind pulp, 200 ml water, and 1 tsp salt. Bring to a boil, then cover and simmer for 8-10 minutes until vegetables are tender.
Add the mashed cooked toor dal to the simmering Sambar. Mix well and simmer for another 3-5 minutes for flavors to meld and reach desired consistency.
