Odia Dalma (Vegetable Lentil Stew)

Ingredients

  • 100 g Split Yellow Moong Dal
  • 150 g Pumpkin chopped
  • 100 g Eggplant chopped
  • 50 g Raw Banana
  • 1 tsp Turmeric powder
  • 2 tsp Roasted Cumin powder
  • 500 ml Water

Cooking Steps

Wash dal and vegetables thoroughly.

Pressure cook dal, vegetables, turmeric, and water for three whistles.

Release pressure, mash vegetables slightly.

Temper with cumin powder and stir well.

Bengali Mangshor Jhol (Pressure Cooked Mutton Curry)

Ingredients

  • 500 g Mutton cut into chunks
  • 100 g Onion paste
  • 20 g Ginger garlic paste
  • 2 tsp Mustard oil
  • 1 tsp Kashmiri chili powder
  • 1 tsp Garam masala powder
  • 300 ml Water

Cooking Steps

Marinate mutton with ginger garlic paste and spices.

Heat mustard oil in pressure cooker until smoking.

Sauté onion paste until golden brown.

Add mutton, sear until browned.

Add water, pressure cook for six whistles.

Garnish with garam masala and serve hot.
