Odia Chatu Besara

Ingredients

  • 300 g button mushrooms, quartered
  • 2 tbsp mustard seeds
  • 1 tsp turmeric powder
  • 100 ml water
  • 15 ml mustard oil

Cooking Steps

Blend mustard seeds and water into a fine paste.

Heat mustard oil, sauté mushrooms until brown.

Add turmeric and mustard paste, cook for 5 minutes.

Simmer with 100 ml water until gravy thickens.

Bengali Cholar Dal

Ingredients

  • 200 g soaked split bengal gram
  • 5 g ginger paste
  • 2 g cumin powder
  • 5 g sugar
  • 10 ml ghee

Cooking Steps

Pressure cook gram with water until soft.

Heat ghee, temper with cumin seeds.

Add ginger, cooked gram, sugar, and salt.

Simmer until thick, garnish with toasted coconut.
