Miso-Glazed Shiitake Zoodles

Ingredients

  • 300 g Zucchini spirals
  • 150 g Fresh shiitake mushrooms
  • 15 ml Mirin
  • 15 ml White miso paste
  • 10 ml Sesame oil

Cooking Steps

Whisk miso and mirin in a small bowl.

Heat sesame oil in a pan over high heat.

Sauté shiitake mushrooms until golden.

Add zucchini spirals and toss for 2 minutes.

Ingredients

  • 300 g Extra-firm tofu, cubed
  • 15 ml Soy sauce
  • 1 tsp Garlic powder
  • 15 ml Avocado oil
  • 1 pinch Smoked paprika

Cooking Steps

Pat tofu cubes dry with a paper towel.

Toss tofu with garlic powder and smoked paprika.
