Masor Tenga Style Aloo-Tomato Curry

Ingredients

  • 300 g Potatoes, cubed
  • 200 g Tomatoes, pureed in blender
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Fenugreek seeds
  • 1 tbsp Mustard oil
  • 1 tsp Lemon juice
  • 300 ml Water

Cooking Steps

Heat mustard oil in pressure cooker, add fenugreek seeds and sizzle.

Add pureed tomatoes and turmeric; cook until oil separates.

Add cubed potatoes and sauté for 5 minutes.

Add water, close pressure cooker, and cook for 3 whistles.

Stir in lemon juice before serving to achieve the signature tangy profile.

Mati Mahor Dal (Black Gram)

Ingredients

  • 150 g Black gram (urad dal)
  • 1/2 tsp Ginger paste
  • 1 tbsp Mustard oil
  • 2 dried Red chilies
  • 400 ml Water

Cooking Steps

Wash dal and add to pressure cooker with water and ginger paste.

Cook for 4-5 whistles until soft.

Heat mustard oil in a small pan, fry red chilies, and pour over the cooked dal.
