Kerala Style Chicken Pepper Fry
Ingredients
- • 400 g boneless chicken, cut into small pieces
- • 2 tbsp coconut oil
- • 1 sprig (5 g) curry leaves
- • 2 green chillies (10 g), slit
- • 1 medium onion (100 g), thinly sliced
- • 1 tbsp (15 g) ginger-garlic paste
- • 0.5 tsp turmeric powder
- • 0.5 tsp red chilli powder (optional, for color)
- • 1.5 tsp freshly crushed black pepper
- • 1 tsp chicken masala powder
- • 1 tsp salt, to taste
Cooking Steps
Marinate chicken with 0.5 tsp salt, turmeric powder, and red chilli powder (if using). Set aside for 5-8 minutes while preparing other ingredients.
Heat coconut oil in a large pan or kadai over medium-high heat. Add curry leaves and slit green chillies. Sauté for 30 seconds until fragrant.
Add sliced onion and the remaining 0.5 tbsp ginger-garlic paste. Sauté until onions turn golden brown, about 5-7 minutes.
Add the marinated chicken pieces to the pan. Fry on medium-high heat, stirring occasionally, until the chicken is cooked through and lightly browned, about 10-12 minutes.
Stir in the freshly crushed black pepper and chicken masala powder. Toss well to coat the chicken, cooking for another 2 minutes to allow the flavors to meld.
Adjust salt if necessary and serve hot.
