Kerala Style Avial-Style Veg Stir-Fry

Ingredients

  • 150 g finely chopped carrots
  • 150 g chopped beans
  • 100 g grated coconut
  • 1/2 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 5 ml coconut oil
  • 1 pinch salt

Cooking Steps

Pressure cook carrots and beans for one whistle.

Blend coconut, cumin, and turmeric into a coarse paste.

Heat oil in pan, add steamed veggies and paste.

Sauté on high heat until dry and moisture evaporates.

Andhra Style Steamed Sprouted Chickpea Sundal

Ingredients

  • 250 g steamed sprouted chickpeas
  • 5 ml ghee
  • 1/2 tsp mustard seeds
  • 50 g grated fresh coconut
  • 1/4 tsp salt

Cooking Steps

Pressure cook sprouted chickpeas until tender, about 8 minutes.

Heat ghee in a pan, add mustard seeds to crackle.

Add cooked chickpeas and sauté for 3 minutes.

Stir in grated coconut and salt, toss, and remove.
