Kerala Avial

Ingredients

  • 100 g Drumstick
  • 100 g Elephant Yam
  • 100 g Carrots
  • 100 g Raw Mango
  • 100 g Freshly grated coconut
  • 1 tsp Cumin seeds
  • 2 Green chillies
  • 1/2 tsp Turmeric powder
  • 2 tbsp Virgin Coconut oil
  • 1 sprig Curry leaves

Cooking Steps

Cut all vegetables into 2-inch long matchsticks.

Pressure cook the yam and drumstick with turmeric and minimal water for 1 whistle.

Blend grated coconut, cumin seeds, and green chillies into a coarse paste.

Add remaining vegetables to the pressure cooker and cook for 2 minutes until tender.

Stir in the coconut paste and simmer for 5 minutes.

Finish with raw coconut oil and fresh curry leaves.

Tamil-Style Moong Dal Paruppu Usili

Ingredients

  • 150 g Split yellow moong dal
  • 5 Dry red chillies
  • 1 tsp Fennel seeds
  • 100 g Cluster beans (chopped fine)
  • 1/2 tsp Asafoetida
  • 1 tbsp Ghee
  • 1/2 tsp Mustard seeds

Cooking Steps

Soak moong dal for 1 hour, then drain and blend coarsely with red chillies and fennel seeds.

Steam the dal paste in a pressure cooker (no whistle, just steam) for 10 minutes.

Heat ghee in a pan, temper mustard seeds and asafoetida.

Sauté cluster beans until soft.

Add the steamed dal mixture to the pan and crumble it continuously while roasting until golden brown.
