Kadhai Crab Gravy

Ingredients

  • 300 g fresh Crab pieces
  • 150 g Onions, finely chopped
  • 200 g Tomatoes, pureed
  • 1 tbsp Ginger-Garlic paste
  • 1 green chili, slit
  • 1 tsp Coriander powder
  • 0.5 tsp Cumin powder
  • 0.5 tsp Turmeric powder
  • 1 tsp Red chili powder (adjust to taste)
  • 0.5 tsp Garam Masala
  • 1 tsp Amchur (dry mango powder)
  • 1 tbsp Kasoori Methi (dried fenugreek leaves), crushed
  • 2 tbsp Oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Cooking Steps

Heat oil in a heavy-bottomed pan. Add chopped onions and sauté until golden brown.

Add ginger-garlic paste and green chili, sauté for 1 minute until fragrant.

Stir in tomato puree and cook until oil separates, about 5-7 minutes.

Add coriander powder, cumin powder, turmeric powder, and red chili powder. Cook for 2-3 minutes, adding a splash of water if needed to prevent burning.

Add the crab pieces and mix well to coat with the masala. Cook for 5 minutes, stirring occasionally.

Add 150 ml water, salt, garam masala, and amchur. Bring to a simmer, then cover and cook for 8-10 minutes until crab is cooked through and gravy thickens. Stir in kasoori methi.

Garnish with fresh coriander leaves and serve hot.

The Perfect Pairing

Crab Amritsari Fry

Ingredients

  • 200 g Crab legs/claws or smaller pieces
  • 50 g Gram flour (besan)
  • 20 g Rice flour
  • 1 tbsp Ginger-Garlic paste
  • 0.5 tsp Ajwain (carom seeds)
  • 1 tsp Red chili powder
  • 0.5 tsp Turmeric powder
  • 1 tsp Chaat Masala
  • 1 tbsp Lemon juice
  • Salt to taste
  • 100 ml Oil for shallow frying (or as needed for deep frying)
  • Water for batter

Cooking Steps

Clean and pat dry crab pieces. In a bowl, combine gram flour, rice flour, ginger-garlic paste, ajwain, red chili powder, turmeric powder, chaat masala, lemon juice, and salt.

Add a little water at a time to form a thick, smooth batter that coats the crab pieces well.

Dip each crab piece into the batter, ensuring it's evenly coated.

Heat oil in a frying pan over medium heat. Carefully place the battered crab pieces into the hot oil.

Shallow fry or deep fry for 5-7 minutes on each side (depending on size and method) until golden brown and crispy.

Remove with a slotted spoon and place on paper towels to drain excess oil. Serve hot.
