Hyderabadi Bagara Baingan (Spiced Eggplant)

Ingredients

  • 400 g (6 pieces) Baby Eggplant
  • 50 g (0.5 cup) Roasted Peanuts
  • 20 g (0.25 cup) White Sesame Seeds
  • 30 g (0.25 cup) Tamarind Pulp
  • 10 ml (2 tsp) Ginger-Garlic Paste
  • 5 g (1 tsp) Cumin Seeds

Cooking Steps

Slit eggplants into cross shape.

Blend peanuts, sesame seeds, and tamarind into smooth paste.

Heat oil in pressure cooker.

Fry cumin and ginger-garlic paste.

Add eggplant and peanut paste.
