Himachali Siddu-Style Stuffed Red Pumpkin (Kaddu) Pressure Cooked Curry
Ingredients
- • 400 g (1 small) Red Pumpkin
- • 100 g (2 small) Tomato
- • 15 ml (1 tbsp) Mustard Oil
- • 1 tsp Mustard Seeds
- • 0.5 tsp Turmeric Powder
- • 1 tsp Coriander Powder
- • 5 g (1 pinch) Asafoetida
- • 250 ml (1 cup) Water
- • 1 tsp (1.5 tsp) Salt
Cooking Steps

Peel and dice the pumpkin into 3 cm cubes.

Heat mustard oil in the pressure cooker until smoking, then add mustard seeds and asafoetida.

Add diced pumpkin, tomatoes, and dry spices, sautéing for 5 minutes.

Add 250 ml water, close the lid, and cook for 3 whistles on medium heat.

Release pressure, mash slightly to thicken the gravy, and serve hot.
