Gujarati Handvo Mini-Squares
Ingredients
- • 250 g fermented mixed lentil-rice batter
- • 100 g grated bottle gourd
- • 1 tsp turmeric powder
- • 15 ml sunflower oil
- • 1 pinch mustard seeds
Cooking Steps

Blend lentils and rice into thick batter using water.

Mix grated bottle gourd and turmeric into batter.

Heat oil in pan, add mustard seeds, pour batter.

Pan-fry covered until firm and golden on both sides.

Cool slightly and cut into bite-sized lunchbox squares.

Bengali Cholar Dal Tikki
Ingredients
- • 200 g pressure-cooked Bengal gram
- • 50 g mashed boiled potato
- • 2 g ginger paste
- • 5 g mild coconut shavings
- • 10 ml ghee
Cooking Steps

Pulse cooked gram and ginger in blender until coarse.

Combine with mashed potato and coconut shavings.
