Aviyal (Kerala Mixed Vegetable Stew)
Ingredients
- • 100 g Drumstick
- • 100 g Carrots
- • 100 g Raw Banana
- • 100 g Yam
- • 100 g Fresh Coconut (grated)
- • 2 tsp Cumin seeds
- • 3 Green chilies
- • 50 ml Yogurt
- • 15 ml Coconut oil
- • 0.5 tsp Turmeric powder
Cooking Steps

Cut all vegetables into 2-inch long strips.

Pressure cook vegetables with turmeric and minimal water for 1 whistle.

Blend grated coconut, cumin, and green chilies into a coarse paste.

Add the coconut paste to the cooked vegetables, simmer for 3 minutes.

Remove from heat, fold in yogurt and raw coconut oil, and mix well.

Ingredients
- • 200 g Boiled Chickpeas
- • 1 tbsp Coconut oil
- • 1 tsp Mustard seeds
- • 1 tsp Urad dal
- • 2 Dried red chilies
- • 5 Curry leaves
- • 20 g Fresh grated coconut
Cooking Steps

Heat oil in a pan, add mustard seeds, urad dal, dried red chilies, and curry leaves.

Once seeds splutter, add the boiled chickpeas.

Sauté for 5 minutes until flavors coat the chickpeas.

Garnish with grated coconut before serving.
