Avial (Mixed Vegetable Curry in Coconut Base)

Ingredients

  • 200 g Mixed vegetables (carrot, beans, drumstick, raw plantain)
  • 100 g Grated coconut
  • 5 g Cumin seeds
  • 2 Green chilies
  • 50 ml Yogurt
  • 10 ml Coconut oil
  • 1 tsp Turmeric powder
  • 1 tsp Salt

Cooking Steps

Pressure cook vegetables with turmeric, salt, and minimal water for 1 whistle.

Blend grated coconut, cumin, and green chilies into a coarse paste.

Add the paste to the cooked vegetables and simmer for 3 minutes.

Stir in yogurt and coconut oil, then remove from heat.

The Perfect Pairing

Moong Dal Tadka

Ingredients

  • 100 g Split yellow moong dal
  • 5 g Mustard seeds
  • 2 Dried red chilies
  • 5 g Garlic, minced
  • 10 ml Ghee
  • 300 ml Water

Cooking Steps

Pressure cook the moong dal with water and a pinch of turmeric for 3 whistles.

Heat ghee in a small pan, add mustard seeds and dried red chilies.

Add minced garlic to the ghee until golden.

Pour the tempering over the cooked dal and stir well.
