Avial (Kerala Mixed Vegetable Stew)
Ingredients
- • 100 g Drumstick
- • 100 g Yam (Suran)
- • 100 g Carrots
- • 100 g Raw Plantain
- • 100 g Fresh Coconut (grated)
- • 1 tsp Cumin seeds
- • 3 Green chilies
- • 1/2 tsp Turmeric powder
- • 1 tbsp Coconut oil
- • 10 Curry leaves
- • 100 ml Water
Cooking Steps

Cut all vegetables into 2-inch long thick strips.

Pressure cook vegetables with salt and turmeric for 1 whistle.

Use blender to pulse coconut, cumin, and green chilies into a coarse paste.

Add coconut paste to the cooked vegetables, stir gently, and simmer for 5 minutes.

Finish by drizzling raw coconut oil and garnish with fresh curry leaves.

Paruppu Usili (Steamed Lentil Crumble)
Ingredients
- • 100 g Toor dal (soaked)
- • 50 g Chana dal (soaked)
- • 5 Dried red chilies
- • 1/2 tsp Asafoetida
- • 1/2 tsp Mustard seeds
- • 150 g Cluster beans (chopped)
- • 1 tbsp Sesame oil
Cooking Steps

Coarsely grind soaked dals with red chilies and asafoetida in the blender.

Steam the ground dal paste in a pressure cooker (without weight) for 10 minutes until firm.

Crumble the steamed dal mixture.

In a hot pan, temper mustard seeds in oil, sauté cluster beans until tender.

Add the dal crumble to the beans and stir-fry on low heat until golden and crispy.
