Avial (Kerala Mixed Vegetable Stew)

Ingredients

  • 100 g Drumstick
  • 100 g Yam (Suran)
  • 100 g Carrots
  • 100 g Raw Plantain
  • 100 g Fresh Coconut (grated)
  • 1 tsp Cumin seeds
  • 3 Green chilies
  • 1/2 tsp Turmeric powder
  • 1 tbsp Coconut oil
  • 10 Curry leaves
  • 100 ml Water

Cooking Steps

Cut all vegetables into 2-inch long thick strips.

Pressure cook vegetables with salt and turmeric for 1 whistle.

Use blender to pulse coconut, cumin, and green chilies into a coarse paste.

Add coconut paste to the cooked vegetables, stir gently, and simmer for 5 minutes.

Finish by drizzling raw coconut oil and garnish with fresh curry leaves.

Paruppu Usili (Steamed Lentil Crumble)

Ingredients

  • 100 g Toor dal (soaked)
  • 50 g Chana dal (soaked)
  • 5 Dried red chilies
  • 1/2 tsp Asafoetida
  • 1/2 tsp Mustard seeds
  • 150 g Cluster beans (chopped)
  • 1 tbsp Sesame oil

Cooking Steps

Coarsely grind soaked dals with red chilies and asafoetida in the blender.

Steam the ground dal paste in a pressure cooker (without weight) for 10 minutes until firm.

Crumble the steamed dal mixture.

In a hot pan, temper mustard seeds in oil, sauté cluster beans until tender.

Add the dal crumble to the beans and stir-fry on low heat until golden and crispy.
