Avial (Kerala Mixed Vegetable Stew)
Ingredients
- • 100 g Drumstick, cut into 3-inch pieces
- • 100 g Elephant foot yam, cubed
- • 100 g Raw plantain, cubed
- • 100 g Carrots, sliced
- • 100 g Freshly grated coconut
- • 4 Green chillies
- • 1 tsp Cumin seeds
- • 1/2 tsp Turmeric powder
- • 2 sprigs Curry leaves
- • 2 tbsp Coconut oil
- • 100 ml Water
Cooking Steps

Pressure cook all vegetables with 100ml water, turmeric, and salt for 1 whistle.

While vegetables cook, grind coconut, green chillies, and cumin seeds into a coarse paste in the blender.

Add the coconut paste to the cooked vegetables and simmer on low heat for 5 minutes.

Finish by drizzling raw coconut oil and adding fresh curry leaves before removing from heat.
The Perfect Pairing
Arachuvitta Sambar (Lentil-based Protein)
Ingredients
- • 100 g Toor dal
- • 50 g Shallots, peeled
- • 100 g Tomato, chopped
- • 1 tsp Coriander seeds
- • 1/2 tsp Fenugreek seeds
- • 2 Dry red chillies
- • 1/4 tsp Asafoetida
- • 30 g Tamarind paste
- • 1/2 tsp Mustard seeds
Cooking Steps

Pressure cook Toor dal until soft and mashable.

Dry roast coriander seeds, fenugreek, and red chillies in a pan, then blend with 50g coconut to make a paste.

Boil shallots, tomatoes, and tamarind water in a pot until raw smell disappears.

Combine dal, roasted paste, and vegetables. Simmer for 10 minutes.

Temper with mustard seeds and asafoetida in oil and pour over the sambar.
