Andhra Kodi Kura (Spicy Andhra Chicken Curry)
Ingredients
- • 500 g Chicken pieces
- • 2 tbsp Oil
- • 1 tsp Mustard seeds
- • 2 sprigs Curry leaves
- • 100 g Onion, finely chopped
- • 50 g Tomato, pureed
- • 1 tbsp Ginger-Garlic paste
- • 1 tsp Red chili powder
- • 0.5 tsp Turmeric powder
- • 1 tsp Coriander powder
- • 1 tsp Garam masala
Cooking Steps

Heat oil in a heavy-bottomed pan, add mustard seeds and curry leaves.

Sauté onions until golden brown, then add ginger-garlic paste and sauté for 2 minutes.

Add chicken and sear until color changes, then stir in all dry spices.

Pour in tomato puree and 150 ml water, cover and simmer for 20 minutes until chicken is tender.

Kodi Vepudu (Dry Spiced Chicken Liver)
Ingredients
- • 250 g Chicken liver, cleaned and cubed
- • 1 tbsp Coconut oil
- • 1 tsp Fennel seeds
- • 50 g Shallots, sliced
- • 1 tsp Crushed black peppercorns
- • 0.5 tsp Turmeric
- • 1 tbsp Lemon juice
Cooking Steps

Heat coconut oil in a pan, add fennel seeds and shallots; sauté until translucent.

Add cleaned chicken liver and turmeric; stir-fry on high heat for 5 minutes.

Add black pepper and salt, continue stir-frying until the edges are crispy but the center is tender.

Finish with a squeeze of lemon juice before removing from heat.
